things we love: steel cut oatmeal

most mornings begin the same way…or some variation. i force garland from the bed and into the living room and begin my day in front of the stove. my usual breakfast takes about 30 minutes depending and i have to admit, for the most part, i’m not awake. but that time in front of the stove, stirring a wooden spoon into a small red pot and sprinkling in cinnamon, it determines my day. there, i stand carrying on a conversation with myself and my Father. there i listen to the thoughts running through my mind from the previous day, fears and anticipations of the day to come, plans and schedules. i like to start my day out that way. the smell of cinnamon and coffee drift through the house as i finally come into the office, breakfast in hand to begin with emails and blogs. sure, not all days are like this…some days, quite frankly, i fly out of bed, throw the dog in the kitchen and run out the door to the gym, but generally, that time in front of the stove with my oatmeal is cherished. so, this thursday’s favorite thing: steel cut oatmeal.

 

 

the first time i made this i was thoroughly disappointed. now, i know most healthy things with no additions can taste like earth and take a little bit of getting used to. but after some tweaking, here’s what i came up with:

  • 1 cup of water
  • 1/4 cup of steel cut oatmeal
  • cinnamon
  • tsp of light brown sugar
  • 1/4 cup of blueberries to top
  • and depending on the day, i might add in a little bit of cinnamon vanilla coffee creamer…but only on special occasions…like tuesdays and bank holidays.
